Step 1
  1. Chop parsley and tomato, place in a small bowl and season with salt and lemon juice.
Step 2
  1. Saute kale with 1/2 tbsp olive oil. Set aside. In the same pan add the rest of the olive oil and fry 2 eggs to your liking.
Step 3
  1. Core a cherry tomato and fill with guacamole. Arrange parsley salad, kale, tomato and eggs on plate and enjoy!
