BACON WRAPPED CHICKEN THIGH
  1. Preheat oven to 400 degrees F Cut ginger in half and reserve half for chicken and half for salad.
  2. Grate ginger then butterfly the chicken thigh and open. Spread ginger over the inside and season with a few dashes of soy sauce. Then, roll your chicken thigh into a cigar shape.
  3. Wrap bacon around chicken thigh.
  4. Line a cookie sheet with foil and spray with non-stick spray.
  5. Bake chicken in middle of cookie sheet for 25 minutes or until crisp and golden.
ASIAN SLAW
  1. Chop cilantro and cut Napa cabbage into very thin slices. Peel and cut a 1 inch thick slice of jicama length wise. Weigh and trim if needed. Slice jicama into match sticks. Chop avocado wedge into chunks. Slice remaining fresh ginger into match sticks. Thinly slice cucumber. Julienne pickled ginger. Chop shiitake mushrooms. Add all to a bowl.
  2. For dressing, in a small bowl, add Braggs liquid aminos, rice vinegar, stevia, sesame oil and sesame seeds. Whisk together and add to Asian slaw.
