Brain Healthy Breakfast – Salmon Lox, Chia Cake with Cream Cheese

This is a “Brain Food” breakfast, high in Omega 3s / DHA found in salmon, eggs, and chia seeds.

The therapeutics of this breakfast is with the parsley salad and daikon spears. We use angiogenesis inhibiting parsley with lemon juice.

Quick Lox and Egg
  1. Cut salmon into very thin slices. Cover a small plate with half the sea salt. Lay salmon evenly on top of the salt. Cover salmon with the additional salt and set aside while you prepare the rest of your breakfast.
  2. Boil egg to your liking. Slice and plate.
Chia cake
  1. In a small bowl, add chia seeds with water, a bit of salt and what ever spices you wish. Mix and let stand for a minute. Heat a small pan and coat with coconut oil spray. Pour chia mixture into pan and cook on medium for 2 minutes and flip. Cook for an additional minute. Remove from heat and set aside. Add 1 Tbsp cream cheese on top of chia cake. Plate.
Therapeutics
  1. Make your quick parsley salad but adding to a bowl, chopped parsley, lemon juice, salt and pepper, and olive oil. Set aside and let marinate a few minutes.
  2. Arrange the daikin radish spears and avocado slices together on the plate.
Finish the Lox
  1. Rinse the salt off of the lox and spat dry. arrange on the plate and enjoy.
