  1. Preheat the oven to 375 degrees F. Cut and clean spaghetti squash. Drill olive oil and add salt and pepper to taste.
  2. Wrap squash in foil and place in oven cut side down. Bake for 30 minutes.
  3. Meanwhile, melt 2 tablespoons of the butter with heavy cream, in a medium saucepan over low heat. Off the heat, add salt, pepper, nutmeg, and gouda cheese.
  4. Remove squash from oven. Let sit for 5 minutes still wrapped. Scoop quash out of shell and add to cheese sauce. Stir and serve with parsley.
