Instructions
  1. Prepare Caulirice: grate cauliflower or rice it in a food processor. Put it in a microwave safe bowl and add 1 tsp lime juice, 1 tbsp cilantro and a sprinkle of salt. Cover and microwave on high for 4 minutes. Set aside.
  2. Make Pico De Gallo: In a bowl, add chopped tomato, onion, add remaining cilantro, salt and remaining lime juice. Set aside.
  3. Heat a skillet with olive oil and through in chicken mixture.
  4. Saute until golden and add onion slices.
  5. Take chicken out of pan and set aside.
  6. Blanch collard green leaf in boiling salted water for 1 minute. remove and dry well on paper towels.
  7. Add cauli-rice,and layer cheese, chicken, sour cream, pico de gallo and avocado.
  8. Roll as you would a normal burrito. Enjoy!
