I came up with this recipe when I ran out of cauliflower. I found it to be crisper that cauliflower and truly delicious! Cabbage in general—but also Savoy cabbage in particular—turns out to be an especially good source of sinigrin. Sinigrin is one of the cabbage glucosinolates that has received special attention in cancer prevention research. The sinigrin in cabbage can be converted into allyl-isothiocyanate, or AITC. This isothiocyanate compound has shown unique cancer preventive properties with respect to bladder cancer, colon cancer, and prostate cancer.

  1. Chop cabbage finely and slice mushroom.
  2. Combine 1/8 cup of shredded mozzarella with parmesan and cabbage and toss well. Add olive oil to hot pan then evenly spread cabbage and cheese mixture.
  3. Cook on medium heat for 2 minutes or until crispy on the sides.. Flip over and cover with tomato sauce, the other 1/4 cup of mozzarella, then pepperonis and mushrooms.
  4. Sprinkle with salt and pepper to taste then stick the skillet in the oven at 500 degrees until cheese melts.
