  1. Divide sausage into three portions and stuff into cored mushroom caps. Cook in a toaster oven for 7 minutes at 375 degrees
  2. For zucchini hash browns, grate zucchini and squeeze out liquid. Heat a skillet over medium heat. Add 1/2 tbsp butter. Toss grated zucchini with 2 tbsp of grated Parmesan cheese and add to skillet. Cook for 2 minutes on each side or until golden brown on bottom. Flip over and continue to cook for another 2 minutes.
  3. Cut Feta cheese into chunks and arrange on plate with sliced avocado, tomatoes and olives.
  4. Fry 1 egg over medium with remaining butter and season with salt and pepper to taste. Serve hot.
