Instructions
  1. In a bowl, whisk egg with salt, pepper and chia seeds. Set aside.
  2. In a hot, medium egg pan, add coconut oil and sliced mushrooms. Salt and pepper to taste. Saute until browned and tender.
  3. Pour egg mixture over mushrooms, turn heat down to medium-low and cover for 2 minutes. Check that the center is firming then add cheese and cover for another minute.
  4. Plate open faced omelette and top with slices of avocado and salsa. Enjoy!
