Instructions
  1. In a bowl, whisk egg, chia seeds, onion powder, salt and pepper together and set aside.
  2. In a hot saute pan, add coconut oil and saute bell pepper, onion, nopales.
  3. Pour egg mixture over sauteed veggies, turn down heat to medium and cover for 2 minutes.
  4. Check omelette and make sure the center is firming up. Then add crumbled feta and cover for another 2 minutes
  5. Plate and enjoy
