  1. Make pesto by blending basil, olive oil, walnut, and garlic. set a side
  2. Zucchini Pancake: In a small bowl combine shredded zucchini with 2 tbsp grated Parmesan cheese, 1 egg, salt and pepper to taste and baking powder.
  3. Mix vigorously and pour into a small saute pan with butter to make one single pancake. Cook for 2 minutes on each side.
  4. Poach egg in simmering water
  5. Warm 1 slice of ham in skillet
  6. Layer pancake, ham and poached egg and top with pesto. Enjoy!
