Step 1: Prepare Lemony Parsley Salad
  1. First, clean herbs filling a large bowl with cool water then adding basil, parsley and mint. Let herbs soak for a minute then gently rub herbs together in water. Take out, rinse again with cool water and lie on a paper towel and pat dry.
  1. Finely chop herbs together, stems and all. Chop the 2 inch chunk of cucumber and 1 slice each of tomato and onion, toss with herbs, olive oil, lemon crystals salt and pepper. Set aside.
Step 2: Kale & Egg
  1. Saute kale in 1/2 tbls butter and season to taste. Arrange in center of plate.
  2. Add remaining butter to pan and fry egg over medium and place on top of kale.
  3. Slice avocado and place on plate with Lemony Parsley Salad.
