  1. Place oven on broil and place Poblano on a lined cookie sheet and broil for 5 minutes on each side. When blackened, take out of the oven and place inside a closed paper bag for 5 minutes, Let that baby steam in there for a few. Take out, peel and remove top and seeds.
  2. Thaw cooked shrimp in boiling water for 1 minute, drain and pat dry.
  3. In a small bowl add half of the chopped cilantro (1 tbsp), salt & pepper, sour cream, crumbled queso fresco or shredded cheese, and shrimp. mix well then stuff into the peeled pepper.Bake for 5 minutes.
  4. Mash avocado with tomato, onion, lemon crystals, salt and pepper. Add remaining cilantro. add mixture to the top of the shrimp stuffed poblano.
