The word kofta originates from the Persian word kuftan, meaning "to pound" or "to grind," referencing the preparation of ground meat. While each region has its own take—Greek keftedes, Turkish köfte, and Lebanese kibbeh—the foundational idea remains the same: seasoned ground meat shaped into patties, balls, or skewers and grilled or baked to perfection.
