What color should your beef fat be?

Lately, we've been getting a lot of questions about why some beef fat is not white, but dark yellow. In short - the fat color indicates what the animal has eaten.

White fat (highly marbled, light red colored, more tender meat) = grain fed Yellow fat (some marble, red colored, semi tender meat) = some "grass fed" and some grain finished beef Dark Yellow Fat (rather leaner, dark red colored, tastier meat, higher carotene/pre-cursor of Vitamin A) = pastured, 100% grass fed and finished beef
